Chicken and Veggie Fried Rice - Easy One Pot Meal
Ingredients
- 300 grams of rice
- 500 ml of chicken broth
- 300 g chicken breast, cubed
- 1 onion, diced
- 2 carrots, cut into small pieces
- 1 red bell pepper, cubed
- 100 g peas (fresh or frozen)
- 3 cloves of garlic, chopped
- 2 THE soy sauce
- 1 tsp paprika powder

- Fresh parsley for garnish
Instructions
1. Heat the olive oil in a large pot and fry the onion and garlic in it with glass.
2. Add the cubed chicken breast and fry until golden brown on all sides.
3. Add carrots and peppers and fry for about 5 minutes until the vegetables soften slightly.
4. Add the rice and stir well so that it mixes with the other ingredients.
5. Add the chicken broth, soy sauce, paprika powder, salt and pepper. Bringing everything to the boiling.
6. Reduce heat, cover pot and let rice simmer for about 15-20 minutes until liquid has absorbed and rice is done.
7. Finally stir the peas and let them simmer for another 5 minutes.
8. Garnish with fresh parsley and serve.
